Brownies by Bonnie

This is my go- to, super easy, completely delicious, vegan brownie recipe. I don't share it with everyone. Only clever people who find it on a secret link on my website, like you. 

Warning: just because these gooey blocks of heaven are vegan does not mean they are healthy. Try not to eat them all at once, ok? Or... who am I kidding, you can do whatever you want. No judgement here. 

 

Perfect Vegan Brownies

  • 5 tablespoons sunflower oil

  • 250g dark chocolate

  • 170g self-raising flour

  • 3 heaped teaspoons cocoa powder

  • 180g caster sugar

  • pinch of salt

  • 210ml soya milk

  • 20ml espresso (Not a coffee fan? Don't worry, it doesn’t make it coffee-y, it just adds richness.
    Tbh, sometimes I just make a strong instant coffee, because I seriously CBA to make a proper espresso)

  • 200g walnuts nuts (optional)

  • Microwave/ Bain- Marie

  • Silicone spatula

  • Bowl to melt chocolate

  • Mixing bowl

  • Square tin

  • Sieve

  • Scales

  • Measuring jug

  • Greaseproof paper

  • Knife

  • Oven

  • Cooling rack

Step One: Pop the oven on to 180°c degrees/ gas mark 4. Grab a square baking tin (trust me, you want the crispy corners) and put a square of greaseproof paper in the bottom so your brownies come out super easy. 

 

Step Two: Melt 150g of the chocolate with the oil, soy milk, and coffee

You could do this by putting all the ingredients in the microwave for 20 second bursts (so it doesn’t burn) or by putting the ingredients in a metal bowl and then resting it over a saucepan with boiling water in. Make sure the bowl isn’t touching the water. This is called a double boiler, or a Bain- Marie.

Step Three: Sieve the flour and cocoa powder together in a large bowl. Add a generous pinch of salt and the sugar. Add the melted chocolate, oil, coffee, and soy milk combination and stir everything well.

 

Step Four: Chop the remaining chocolate, and the nuts if you’re going to add them. Pour everything into the square tin and get it straight in the oven.

Step Five: These brownies should be gooey in the middle, so they shouldn’t take longer than 20 minutes.

Take them out once they’re done and get your delicious brownies on a cooling rack. Once fully cool, chop into squares and devour. (Consider that Step Six.)

DISASTER! Overcooked your brownies? Sadly, there’s only one thing to do… MAKE SUNDAES! Gather some vegan ice cream, bananas, peanut butter, and maple syrup. (If you mix the peanut butter and maple syrup you’ll make a sweet, caramelly, peanutty sauce.) You’ve got yourself a kick-ass pudding.
